Strawberry Croissant Brunch Bake

It was goat yoga weekend again at the farm and I love to greet my guests after a workout with a surprise brunch. This is something that I've tried another time and it's now a staple in our home. It's perfect for brunch or breakfast and is pretty quick and super simple!

I hope you'll have your girl friends over or make this sweet recipe when your kiddos have a slumber party.

TIP: it does need to rest overnight in the fridge or for 20 minutes before baking, so prep before!

Strawberry Croissant Brunch Bake Recipe

Strawberry Croissant Bake

1 can of Pillsbury Crescent Rolls (I use the honey butter) 2 cups frozen strawberries (or berries of your choosing) 8 oz of softened cream cheese 2/3 cup sugar 2 eggs 1 tsp vanilla 1 drop of Cinnamon Bark Vitality Oil 3/4 cup milk

  1. Bake croissants/crescent rolls per package instructions.

  2. Spray small baking dish with baking spray. Add baked crescent rolls to dish in small pieces (just pull apart). Distribute frozen strawberries over top.

  3. In a mixing bowl, beat cream cheese for at least 30 seconds or until smooth. Gradually stir in sugar, eggs, vanilla, cinnamon bark vitality oil, and milk. Mix until fully incorporated.

  4. Pour mixture over berries and rolls.

  5. ***Let rest overnight in fridge or for at least 20 minutes.

  6. Bake 350 for 35-40 min or until golden brown and set.

  7. Serve warm and spring powered sugar on top!
